1 med. red onion sliced
1 cup seasoned rice wine vinegar
1 minced clove garlic
1 tablespoon sugar
1 1/2 teaspoons Kosher salt
8 slices watermelon, rind removed
1 cup crumbled Cotija or feta cheese
5 ounces assorted baby lettuces (I recommend Earthbound Farm Organic Herb Blend - organic baby
lettuces with parsley, dill and cilantro).
3 tablespoons Smokey Dijon Vinaigrette (recipe below)
In a small bowl, combine red onion with water, vinegar, garlic, sugar and salt. Chill 2 hours or overnight. Remove onions and discard marinade.
Toss the greens with 2-3 tablespoons Dijon Dressing (to your taste), crumbled cheese, and the marinated onion. Top each slice of watermelon with a generous handful of the greens mixture, and serve extra Dijon dressing on the side (or drizzle some extra dressing over the watermelon before topping with greens).
Smokey Dijon Dressing (makes about one cup)
2/3 cup olive oil
1/3 cup red wine vinegar
2 tablespoons honey
2 teaspoons sweet paprika
2 teaspoons Dijon mustard
Kosher salt and pepper to taste
Whisk all ingredients together to emulsify.
